About Vinification:
Manual harvesting, destemming, pressing, maceration with the skins for 12 to 15 days at a maximum temperature of about 30°C, complete malolactic fermentation before winter. In spring, it goes into oak barrels for a period of 24 to 28 months.
About tasting:
Colour typical of Nebbiolo at its best: intense, with ruby-red facets and subtle, lighter hues. Mineral and animal notes complete its structure, typical Bussia site complexity and overall richness, which may be likened to the might of a symphony orchestra. The sensations anticipated in the nose are repeated in substance on the palate. Though it has traditionally been nicknamed the “Wine of Kings” because only monarchs could afford to drink it day by day, despite its strong personality, Barolo can in any case be enjoyed frequently with red meat and ground game, even – why not? – with very rich fish dishes, such as baked turbot, or a dinner featuring speciality cheeses.
