About Vinification: Maceration takes place on the lees: fermentation lasts approximately 15-20 days, together with gentle and frequent pumping-over. Stainless steel tanks are used for fermentation, that takes places at a controlled temperature of 30-32°C. When fermentation is over the wine is then stored in oak barrels for at least two years |

About tasting: Clear and purple red. The Brunello has orange shades that are typical of all aged red wines. On the nose it shows initially an intense blackberry and cherries smell, which could develop into leather, tabacco or jam after oxigenation. On the palate is full bodied with extreme depth and richness and well balanced acidity. A wonderful partner for roast meat dishes and steak "florentin style", the Brunello of Montalcino is perfect with mature pecorino cheese in general and excellent with Parmigiano Reggiano cheese. |
