About Vinification:
Grapes picked and temperatures reduced immmediately to 10℃, racking and soft pressing. Alcoholic fermentation: 10-15 days. After a short period of rest, separation of crude sediment, malolatic fermentation, after fermenatation the wine is stabilisation and bottling. Bottle maturation for 3 months.
About tasting:
Ruby red with tendency towards garnet. Typical depthness of matured prunes, balsamic and notably spicey, full body and harmonious which is corfirmed throught the distinctive smell.
About foods:
Red meat, meat Ragù, game, grilled meats, seasonal cheeses.
