About Vinification:
Grapes are manually harvested late in the season (at the end of October) and placed on racks for a withering phase that lasts nearly 2 months. After destemming and pressing, the must is fermented for a long time at cellar temperature, partly in steel vats and partly in durmast barriques. A 6-month refining process in the bottle takes place before the wine is released on the market.
About tasting:
This wine is golden yellow with bronze-like hues. The nose will immediately perceive the scent of nectarine and apricot. When it is young, you’ll also perceive banana. The engulfing sweetness of its sugars are mitigated by its typically tannic nature which makes it intriguing and never too sweet.
About foods:
A typical dessert wine, it combines especially well with old-fashioned local desserts like the Gubana or la Bisiola. It’s also a great match for semiaged cheeses and prosciutto with figs.
