About Vinification: Manual harvesting, destemming, pressing, maceration with the skins for 12 to 15 days at a maximum temperature of about 30° C, complete malolactic fermentation before winter. In spring, it goes into oak barrels for a period of 12 to 14 months. |

About tasting: Typical Nebbiolo colour: intense ruby-red with the subtle, light nuances that every connoisseur will recognise. Inviting without being aggressive, its bouquet is highly complex, bringing out continual full-bodied, winy, spicy, vegetative and earthy sensations alongside the notes typical of the Nebbiolo variety (rose). It is very full on the palate, but maintains its underlying elegance, something of a feminine personality; it is intense and enjoyable right from the initial impact, long but without assaulting the palate, with refined final tannin sensations.The aftertaste is extremely agreeable and moreish. This is a fine wine for the whole meal, obviously finding its best match in red meats and game birds. |
