About Vinification:
After crushing, the marcs are left to macerate in contact with the musts for approx. a week at temperatures ranging between 25° and 28° C. In this part of the wine-making process, frequent pumping over allows for improved extraction of color and aroma from the skins. Once alcoholic fermentation is completed, the malolactic process is carried out and the wine is placed in 300-liter casks, where it stays for approximately 6 months. An in-bottle refining stage follows.
About tasting:
This somber ruby-red wine offers an intense, well-defined bouquet where you’ll immediately perceive hints of blackberry and black currents, which are followed by the suggestion of pepper, laurel and licorice. To the palate, it offers a full-bodied taste with a good level of complexity and persistence. Its finish is characterized by a light, intriguing flavor of wood.
